Recipe - Orange-Scented Sundried Tomato RelishCategories: Pickles &, Relishes, Orange-Scented Sundried Tomato Relish
2 pn Powdered saffron
One half cup Sauvignon Blanc wine
One fourth cup Red wine vinegar
One fourth cup Sugar
1 tablespoon Olive oil
2 tablespoon Red onions; finely minced
2 tablespoon Yellow bell peppers; finely
1 One half cup Tomatoes; peeled, seeded,
One half cup Sonoma dried tomato halves
1 Orange zest; blanched
One half cup Tomato juice
4 Oranges; peeled, segmented
Salt; to taste
Cayenne pepper; to taste
Reconstitute the dried tomatoes; drain and slice thin.
Simmer saffron with white wine for five minutes. Strain into another pan
containing red wine vinegar and sugar. Reduce to syruplike consistency.
In oil, lightly saute onions and peppers, retaining color and texture. Add
tomatoes, dried tomatoes, zest, juice, oranges, salt and pepper and allow
to stand 2 or more hours at room temperature to develop taste.
