Recipe - Petite Cheesecakes

Ingredients:

1 pound Dried Idaho red beans;
cooked and mashed
2 cup Chopped sweet Spanish onions
2 Cloves garlic; minced
One half cup Bacon drippings
1 teaspoon Tabasco sauce salt
One half pound Monterey jack cheese
3 Doz flour tortillas; (8
inch)
Oil for deep fat frying

Fry beans, onions and garlic in hot bacon drippings until dry and crispy.
Season with Tabasco sauce and salt to taste. Cut cheese into One half x 3/8 x 1
inch pieces. Cut each tortilla into four pie shaped wedges. Shape beans
Into oval shapes around cheese cubes. wrap with tortillas fastening with
toothpicks. Fry in deep fat at 400 degrees F for 3 to 5 minutes, until
lightly browned. Remove toothpicks before serving.
