One fourth cup Honey
2 teaspoon Coconut extract

1 teaspoon Orange peel
1 cup Coconut flakes
3 cup Bread flour
1/3 cup Vital gluten
2 teaspoon Active dry yeast
Three fourths cup Banana chips; crushed

1 Three fourths LB
2/3 cup Orange juice
1 One half cup Bananas; mashed
2 tablespoon Vegetable oil
One fourth cup Honey
2 One half teaspoon Coconut extract
1 teaspoon Salt
1 teaspoon Orange peel
1 One fourth cup Coconut flakes
3 One half cup Bread flour
1/3 cup Vital gluten
2 teaspoon Active dry yeast
Three fourths cup Banana chips; crushed

NOTES : The high amount of gluten is necessary in this moist, tropical
bread. It should rise to medium height with the gluten because of
the high amount of sugar. As with any bread which uses a fruit for
all or part of the liquid, watch the dough carefully. If you elect
to use a mediumsized banana and not measure it precisely, take
care to watch the dough. Add flour or water as necessary, one TBS
at a time. Use very ripe bananas. The banana chips should be
crushed. Pineapple extract may be used in place of the coconut
extract if desired.
